{Cornbread Salad | Recipe}

 This is, by no means, supposed to be like a Borroum’s cornbread salad (if you know what I’m talking about, then you have lived…lol…if not, get to Corinth and try one!) but once I got a job 2 years ago (Thank the Lord!), I was no longer able to go to Borroum’s on Thursdays (Cornbread Salad day) to get myself (and my mom) a salad…
 
…which leads me to our version of a…
 


*the amount of each ingredient is different every time I eat this

Ingredients:
lettuce (I like the leafy green kind)
cornbread (duh! lol)
onions (I prefer green onions but any kind will do)
beans (my favorite is white beans but I have tried blackeyed peas and pinto beans before)
cheese
mayo (I use this instead of dressing but it is good with Ranch)
tomatoes
bacon bits

(optional)
green peppers (or any peppers you want)
jalapeños

Directions:
Obviously order doesn’t really matter but I “layer” my cornbread salad in this order:
(1) lettuce
    -if I have them, I add tomatoes around the sides of the salad
(2) cornbread
(3) beans
(4) onions
    – if I have peppers, I add them next
(5) mayo (or dressing)
(6) cheese
(7) bacon bits

Get creative…add your own ingredients. Just enjoy! I know I sure do! 🙂
